My mothe...I'm Cajun so I grew up eating tongue. My mother would take the skin off before cooking it (don't know how she did it) then insert a knife down the center of the tongue almost all the way to the tip of the tongue...then stuff garlic, onions and bellpepper (seasoned with cayenne, black pepper and salt) into the long hole til the tongue was almost doubled in thickness, filled up with all those veggies...then she'd roast it slow and low in the oven for hours. It would make the most awesome gravy and we'd eat the gravy over rice with a side of corn maque choux. Yum. Probably my favorite meal growing up.<br /><br />Since I can't clean it pre-cooking, I stuff it raw, then simmer it in a pot of water for two hours letting the water/gravy reduce. I take it out gently (not to dislodge all the stuffing) and peel it, then put it in the oven with its gravy to roast it and turn it brown (lovely carmelization). <br /><br />It is to die for and so very healthy for you. If you're worried about it, use more mono- and polyunsaturated fats, but beef is actually pretty high in monounsaturated fat. It's not solely saturated. You can definitely feed the skin t...Shelly, and Amy<br />You can definitely feed the skin to your dogs. I feed it to my dogs all the time. No need to dry it out though. Although you could do that too, I suppose. I don't think it would be very chewy that way though. More likely just crunchy, depending on how thoroughly you dried it.<br /><br />I get my tongue when I buy a side of beef from a local farmer, so I get a bit more of the whole thing than you'd get from the store. I feed the odd bits to my dogs and/or cats; raw, NOT cooked. We've been brainwashed into thinking our dogs/cats shouldn't eat raw meat. It's absurd, and less healthy for them. Don't even get me started on the crap they call food in those bags and cans (especially the bags!). <br /><br />The atrocious nutrition advice we've gotten for our pets and ourselves over the last half century or so are very much parallel. And the health crisis is about same too. Degenerative diseases like diabetes is rampant among the pet population. Like any other pice of gristly...I love beef tongue. Like any other pice of gristly meat, a pressure cooker works wonders for breaking down the connective tissue. I suspect the delis use it. You can have cooked meat in less than 60 mins. Another favourite way for me to have it is in tongue and blood sausage. It's a German deli meat with pieces of tongue, fat, and a blood, looks like dark mortadella with chunks of tongue.
